Hungover noodles

[22.10.2013]

Hello my dears,

There were a lot of stressing things during the last weeks, so I had less time for cooking. Of course I haven’t forgotten to present you some other recipes of Jamie Oliver’s book 'Save with Jamie'. Yesterday I tried out the 'Hungover noodles'. Unfortunately I couldn’t get some ingredients, that’s always the risk when cooking think from other countries but here’s my version.

For four hungry persons you need:

* one thumb big piece of ginger

* one clove of garlic

* soy sauce

* two tbsp. (rice wine) vinegar

* three tbsp. sesame oil

* three quarters of a china cabbage

* 500g broccoli

* 250g Chinese noodles

* four eggs

* pepper, salt

How to do it:

Wash at first the broccoli and the cabbage and cut the cabbage in small strpes, the broccoli in these tiny roses.

Then cook it for about 5 minutes in salted water and add the noodles when it’s necessary (you see how much the need on the packing, it’s different from sort to sort. While the vegetables get ready peel the garlic and the ginger and mince it in tiny cubes. Then put it in a big bowl with a pinch of pepper, the oil, the vinegar and two tbsp. soy sauce and mix the dressing well. Then whisk the eggs and add any pepper and soy sauce and put it in a pan for making kind of scrambled eggs.  In Jamie’s recipe it’s a fried egg but I don’t like them.. Well and now you’re ready. Put everything together and mix it! The recipe is pretty easy to cook and pretty fast as well. After about 30 minutes I made it.

Great fun with it and good appetite! I hope I helped you with the decision whether buying the book or not ;)

Yummy Pumpkin

[09.09.2013]
On Tuesday I presented you Jamie Oliver’s new cookbook 'Save with Jamie' and one recipe banned my at once so I cooked it the day before yesterday. It is called 'Squash & spinach pasta rotolo'. But instead of spinach I took mangel from our garden and everything is 100% home made. Today I'll show you the 'striver version' but I'll add the alternatives as well.

For five portions you need:
* a squash
* 500g frozen spinach or mangel
* ca. 8 lasagna sheets or
[* 250g flour
 * two eggs]
* 800ml passata or
[* a tin whole tomatoes
 * 500ml sieved tomatoes
 * one carrot
 * one small onion, a glove of garlic
 * some basil leaves]
* one onion
* 60g feta
* cheese for grating
* salt, pepper, sugar, nutmeg, oil, water

So and now I'll start. The book presents a length of 2 hours, 20 minutes for the dish. I'll give you the time after each step.
At frist halve the pumpkin and remove the pips and these odd threads with a spoon, then rub the squash with a oil-salt-pepper-mix before putting it at 180°C into the oven for about 80 minutes. Duration is 4-5 minutes.
After this I prepared the tomato sauce, if you take a finished product this will be dropped of course. For the sauce chop an onion and the garlic glove and braise it lightly in a pot with oil, then add the cubed carrot and deglaze it with the tomatoes. After boiling it up you have to season it with spices and the basil, all this needed about 12 minutes.
Now you should prepare the pasta dough, if you don't take finished sheets. For this mix the flour and the eggs, if the consistency isn't right add flour or any water but if you put it into the fridge for 30 minutes it will become a bit moister. Preparing and rolling takes about 15 minutes.

For the next step you prepare the spinach stuffing. Chop again an onion and braise it lightly then add the spinach or mangel. After this taste it with salt, pepper and some nutmeg and boil it up a little bit. Duration is about 7 minutes.
After about 80 minutes the squash should be soft, test it with a fork and next put the pulp alway from the skin in a bowl. If you're ready with this you nearly made it. You only have to mice the pulp and taste it with nutmeg, salt and pepper. Now it's stuffing time!

Oh, at first put the tomato sauce into a large baking dish.
Spread the pasta sheets [if you take finished ones cook the a little bit, so you can roll it], coat them with squash, add a bit spinach and the some feta.

Roll it and cut it into some pieces [mine were about 6cm]. Put the roulettes in the baking dish, it doesn't matter if they fall over, they're always yummy. Now just bake the casserole at 180°C for 30-40 minutes.

As I already told you, you can find the a bit modified recipe in Jamie Oliver's new book ‚Save with Jamie‘. I was very surprised that this dish is sooo yummy and I'll cook it again very soon.
The 'finished version' works pretty fast and with less effort, just the pumpkin needs some time.
A lot of fun and good appetite.

Attention, big crop!

[05.09.2013]
Maybe some of you have already heard about my fruit trees, I swoon over from time to time. Meanwhile I got three cherries, a peach, an apple, a pear and a plum. And for fruit trees it's usual to do a big crop in automn. You could use my fruits for ice cream, pies, jam, stewed fruit, syrup *bonbons* and whatever. Well, you could.
To be honest, my peach Persi [Yes, all of my trees have names] had to fight against the leaf curl. Nothing did help and so the result were 100 blooms but no single fruit.
Barne the pear and Anton the cherry are mine just since this year and so the neither had fruits.
Riku, my apple started blooming last year in December. Maybe we can crop some candied apples for Christmas. But now?! Not really!
And so there are only three trees left and what should I say -Samu and Lilja the cherries don't like this year and show the modern bald look without leaves.
Shortly I get desperate. Six trees that didn't give me a single fruit, two of them no leaves as well.
But now it's enough self-pity, because my kind plum tree Oskar did it very well. The photo beyond shows the whole crop of my seven trees.

What should I do with them? Boil down? Freeze? Or just eat it all pure?
Next year will be better. I hope so!

Jamie’s new one

[04.09.2013]
For a few weeks now I can’t await the release of Jami Oliver’s new book. It’s the first time I was so much looking forward to his new creation so that I ordered it already a few weeks ago. Because the German version will be released in November and is 5€ more expensive than the English one, I decided to buy it. Besides the German title ‚Cook clever mit [German word for with] Jamie‘ annoys me somehow and I still hope it’s just a bad joke..
But now to my achievement ‚Save with Jamie‘ that I bought for 20,95€.

Like all his other books it’s definitely worth buying it and this time you get rewarded with 288 pages Jamie pure. As the title already says the book is about saving and cooking the best dishes with less money. The first look can’t make you guess that the meals cost that less and I’m sure you can make an impression with every single recipe. For people who need a perfect time management the duration of every dish is stated, besides you can find the number of calories it has.  The book is divided into the chapters veg, chicken, beef, pork, lamb, fish and bonus recipes and also good tips for leftovers.

As a vegetarian I prefer of course the huge veg chapter and I’ll probably try a recipe out of it today or tomorrow. If we already had pumpkins, this would be my first choice. Hmm.

Until the German version will arrive in November I’ll present you a few recipes from the veg chapter. I’m very excited if everything goes right and if the result is as yummy as I think :)
Here's the first recipe:

Muesli..well..bar

[14.08.2013]
Hello :)
Because we talked so much about creativity the last days I decided to create a muesli bar yesterday. I thought recipes that already exist aren’t very ‘creative’ and so I made my own one. Well. The title probably makes you guess that it’s not really clear what this post will be about. I didn’t have enough ‘glue’ for a muesli bar and so I just made a normal but yummy muesli out of it. If you take the double amount of fat, honey and liquid it might be enough for bars ;) Actually it’s stupid to give you the exact information about my muesli but if you want the same you can read the ingredients underneath. Otherwise: be creative and just try it out!

For ca. 6 portions you need:
* 200g Porridge oats
* 50g Almonds
* 30g Sesame
* 30g Desiccated coconut
* 75g Sunflower seeds
* 75g Raisins
* 1 Apple
* 1 Carrot
* 25g Butter/ Margarine
* 3 tbsp Honey
* 3 tbsp Lemon juice
* Milk or yoghurt

Preparation:
At first set the porridge oats, the almonds, the sesame, the desiccated coconut, the sunflower seeds and raisins into a big bowl. Then grate the apple and the carrot and press as much juice as possible out of it into another bowl. Then give the fat into a pot and melt it, after this add the honey and finally the apple-carrot- and lemon juice. Then let it cook about till a kind of syrup develops. [For a tiny vanilla flavour just add a small piece of vanilla bean in the pot (but then you have to fish it out later).]

Finally mix the apple, the carrot, the syrup and all cereals very well. Put it on a sheet for drying and after about 10 minutes you can enjoy your muesli with milk or yoghurt.

As I alread said, maybe it’s enough for bars with the double amount of syrup ;)
Great fun when trying it out and good appetite!
PS.: I forgot the sunflower seeds on the picture.. just imagine them
PPS.: Keep the muesli in the fridge and consume it pretty fast because of the fresh fruits. Or you dry the fruits in the oven or already take small cut dried fruit.

Cookie monster

[05.06.2013]

J.D.: You look super!
Elliot: Even in cookie-pants?
J.D.: Especially in cookie-pants you look super.

I think most of the Scrubs fans will know this quotation and because nothing is better than a cup of hot milk and some cookies, I'll show you an enlarged version today. Last year I made a cookie monster cake for my best friend. Really easy to make because you can choose the cake's size and also the sort. As topping everything you like can be chosen, it only has to be blue ;)
Here you can see me recipe.

Ingredients (baking pan with about 15 cm diameter):
* 50g butter
* 50 sugar
* 1 tsp vanilla sugar
* 1 pinch salt
* 1 egg
* 130g flour
* 1 tbsp baking powder
* 40g minced chocolate
* milk

Preparation:

At first you have to oil the baking pan with butter and flour it or you just put baking paper in it.
Then mix the butter and the (vanilla) sugar in a bowl. Next add the salt, the egg, the flour, the baking powder and the minced chocolate and stir it as well. If the dough is too dry, put some milk in it. I like the dough very fluid and so I add about 75ml milk. Now you just have to fill the dough in the pan and bake it at 180°C for about 25 minutes.
If the cake it ready, cool it down and hen you can go on at once. Mix sugar powder, lemon juice and blue food colouring for the fast version. For the monster's eyes I melted a bit white chocolate and made a big circle of it, after drying I put a small point of dark chocolate in the middle and that's it. Now you only have to put half a cookie in the monster'as mouth ;) For those who are very assiduous, I give you another recipe for the cookies.
Mix 125g butter, 100g sugar, a tbsp vanilla sugar and an egg creamy. Then add 100g flour, a tsp baking powder and 125g minced chocolate. Now make arbitrarily big blobs on a baking sheet and bake them for ca. 10 minutes at 170°C. Another tip: the cookies don't become hard until they cooled down, don't make them too long! Great fun!

Jamie's restaurants - Part 2

[25.05.2013]
Hello my sweeties,
I'm still owe to you to do the post about one of Jamie Oliver's restaurants and now that fits better than ever.
Well, two or three days after we had this fantastic dinner at the Fifteen, we wanted more and went our way to another restaurant. It is called 'Jamie's Italian' and serves - like the name already reveals - Italian delicacies. There's already a real chain of restaurants, I think there are at least three in London. The restaurants are all well-constructed: outside you can find some pots with several herbs and inside the first thing you see is a small corner with souvenirs.  If you continue your way you pass some worktops where pasta and bread are made.
It smells fantastic everywhere.  And they don’t need any decoration because everything is full of herbs and ham. Some salt and pepper mills are put on the tables. I’m already fascinated before reading the menu ;) This contains no bric-a-brac, only typical dishes that are always welcome. Even penne with tomato sauce is a gourmet dish in this restaurant. Everything tastes perfect and the waiters are also very friendly. If you’re around an Italian you should have a meal there. The prices are ok, as well. I think under the average for London’s situation..

The real highlight was waiting outside: an ice cream van. In the past a VW bus that was rebuilt to a retro ice cream cart touring through London. The different types of ice cream are extraordinary but also extraordinary yummy. Hmmm.
Who isn’t fed up with Italian stuff should visit my blog again next week and watch the ZDF Fernsehgarten tomorrow (26th May) at 11 am! Trust me.
Well and good luck to the BVB! Although they don't need any luck because they're also outclass without that :)

Jamie‘s restaurants - Fifteen

[10.04.2013]
Hello guys,
I should stop promising you so many things.. Posting today will be very stressful ;)
This time I’ll tell you something about my role model, although I lost my dream becoming a cook. I’m a Jamie Oliver fan since the first moments of my childhood. I was fascinated by his skills, he showed despite his hectically moves. And somehow he’s crazy, I think I already liked it these times. As a proud owner of all books and several cooking utensils, my biggest dream was fulfilled three years ago: I got a London trip as a present to my confirmation and the best thing about it, also a reservation for Jamie’s restaurant ‘Fifteen’. The idea after it is giving deprived youth and young adults education and after that, they should work in the Fifteen. The same principle like Christian Rach conducted a few years later in Germany as his great idea.
I don’t have to mention that I’ve counted the days until the date. It was an unbelievable feeling to be on the eve of this fantastic building. The atmosphere was a bit back-breaking and it was very loud but that hasn’t matter because of the hint of Jamie Oliver that was in the air. The meal was great. Probably the best things, I’ve ever eaten. Still today I sometimes taste the airy panna cotta and the sweet and sour sauce of raspberries. On the way to the toilets you could also catch a glimpes of the restaurant’s heart: the kitchen. I’ll never forget this evening!
Well, that’s the first part, I won’t make the second today, it’ll follow soon ;)

Tapas

[06.04.2013]
The post today will be a bit shorter than normally and I hope that it’s going online.. I’m not at home the whole day and so I‘ve tried let it post automatically. Please forgive me if it doesn’t work.
A few weeks ago, I already told you about our ‚Dine with me‘ and I’ve also mentioned my homemade salted pepper peanuts. Some people asked me for the recipe and here it is for all of you:

Salted Pepper Peanuts

Ingredients:
* 250g peeled peanuts
* 2 tsp sea salt
* ½ tsp paprika
* 2 tsp olive oil

Preparation:
At first you have to peel the peanuts. I want to be honest to you: that lasts damn long! When you’re finally ready, put the nuts into an oven-safe bowl and roast them at a temperature of 180°C with the grill in your oven. That takes about 10 minutes but be sure, you keep your eye on it, so they can’t become too dark. And stir the nuts as well.  While the nuts are in the oven, prepare another bowl with the mixed salt and paprika. Now you have to be fast: Put the peanuts out of the oven, add the oil and mix it well. Give them immediately in the other bowl and mix it again.  Well, that’s it. at the end, it’s a bit hectic because the salt doesn’t stick at the nuts anymore, if they’re too cold ;)
Wish you a lot of fun if you try it!

The first year

[02.04.2013]
Slowly I think I’m like one of the crazy mothers because I’m talking about my ‚baby‘ all the time and I’m so proud that it’s already one year old.
No, I haven’t concealed you a pregnancy or some other children, of course I’m talking about my blog. About my sweet sweetie. Yesterday a year ago it should go online, but because the start has failed, I tried it again on the 2nd April. And here we are. Even if I’ll probably say this a hundred times during the next days, I have to tell you: thank you, nobody opens a blog just for himself. Thanks, thanks, thanks. What would I be without you? And what would a birthday be without a cake?

As a thank-you gift you get today a recipe for a yummy and easy to make birthday cake. But what a pity for you, I’m eating it on my own right now :P And please don’t forget I prepared a birthday week with a special post every day, I’ve chosen exactly & that’ll hopefully be a new highlight here :)
Here’s the recipe:

Hot choco-cherry-cubes

Ingredients:
* 200g dark chocolate
* 100g butter
* 4 tbsp sour cream
* 4 eggs
* 4 tbsp flour
* 4 tbsp sugar
* a dried, small cut chili
* a glass sour cherries
* a tsp baking powder

Preparation:
At first you have to melt the chocolate carefully in a water bath and then add the butter and the sour cream and mix it well. Now you take the bowl away from the water bath and add the eggs, the flour, the backing powder, the chili and the sugar and mix it again. After this you have to put the dough in an oiled flat cake pan and put the drained cherries on the top. Afterwards you have to bake the cake for about 35 minutes at 180°C. Then cool it and enjoy it! If you want, you can puree a few cherries, mix them with some yoghurt and make a great dip for your cake out of this.
Good appetite and good luck!

Decorate tortes

[18.02.2013]
This post is about a German magazine, I don’t know if this is interesting for you or if you have the same in your country. I’ve seen a spot on TV about a new baking magazine for a few days now and yesterday my mum bought it for me. I was very happy and started of course with unpacking it, suddenly. There was already the first thing that annoyed me: at least 1m² of paperboard for nothing. Only the presents were fixed there, but it wouldn’t be difficult to fix them on the mag. The price of 1,50€ was very cheap, but that was only for the first edition, the next will cost 4,99€, in my opinion pretty expensive for a journal that is released every two weeks. A present this week was a cupcake stand made of paper. I really like the design. Top!
Present number two were two butterfly cookie cutters. Very cute, but I thought they would be made of plastic, but it was lacquered metal instead. The varnish doesn’t look very keeping, I think it will be on my cookies someday. Don’t know what to say about it.
Third addition was some pink glitter for decorating cupcakes or whatever to eat. But on the tin you could read: 'Deko-Glitter ist ungiftig und nicht gesundheitsschädlich, jedoch nicht zum Verzehr bestimmt. Daher wird empfohlen, Deko-Glitter sparsam auf Backwaren aufzutragen und vor dem Verzehr zu entfernen.'[1] Er, what? They give you something to decorate your food, but you can’t eat. That‘s a shame! Flop!
After I was pretty annoyed because of the utensils, I continued with the mag. And already I hold the first paper in my hand while the rest fell down. Ok, well. I have a booklet with delicious looking cakes I’d really like to make now, at least theoretically. Opening the –now hopefully- right magazine, I have the next paper in my hands ‚Order now!' and the next: A warm welcome to your new collection!'. Hm, I don’t geht this sentence. And then of course a paper with the preview for the next few journals. And then, you might not believe: the magazine. Yes, really. It contains unbelievable 23 pages. And now attention: There are five recipes in it. FIVE! I’m sure you still can’t believe that.
I have to say, I’m very disappointed! If I had to pay 5€ I would be very angry now, but 1,50€ is okay because I really like the stand. The recipes are explained in very easy steps and the photos are beautiful. What I don’t like, is the fact that the cover shows another cupcake stand, not the one you got.
Bag the first edition if you still can get one, if you have to impress somebody, you’ll find one or two recipes but it’s no good idea for baking fans..

Come dine with me

[25.01.2013, 21:34]
Hello you sweeties,
this post isn’t about the TV series, but about a competition, started in my family. Last Saturday, my mum was preparing the dinner, today it’s my turn and next week my dad will invent us. Of course, the others get grades for their evenings but the winner doesn’t get 500€, he gets ‘just’ fame and honour. Because I’m alone tonight I can prepare a few things now.
My evening’s device is: In three courses through Europe.
The starter will be different Tapas and Antipasti, so there is Spain and Italy with a sauce made of Bulgarian yoghurt. As a main course we’ll eat some fried grated potatoes with a mushroom sauce and salad. In this course we have the Swiss and Germany and in the dessert, England, Finland and a second time Germany will be present. We’ll have a chocolate cake and a bowl made of Kauralastut (Finnish oat cookies) filled with a scoop of almond ice cream. What do you think about my menu?  I’m so nervous and of course I want to win as well. Do you have some ideas for a French drink without alcohol? That’s what is still missing..
And for entertaining my parents while I’m in the kitchen, they have to make a kind of quiz. The have to tell which dish is typical for which country. The winner will get a present, I still have to buy, too.
Because I got some clicks from abroad, I decided to do my Posts in English as well. I’m sorry for the mistakes. I’m already a bit tired and haven’t written such a long text in English for a few months.. So be patient with me ;)
See you,
_Marie_
